“4 Favorite Comfort Meals”

When I think of comfort food, I think of mashed potatoes. Not sure why… but I have another question for you? Why does the main dish always get the attention? With the busy holiday season at hand, the sides have to be just as hearty as the main course to get us through the hustle and bustle of this time of year.

The thing about this time of year, is that although we need a healthy and hearty meal, we also always seem to be pressed for time. Most meals can be made pretty quickly if they have to be. I can throw some pork in the crock pot, I can toss some chicken in the over, or I can put some burgers on the grill. The main course is always the easy part, but I can’t stop there. I can’t let the meat steal the show. Some times it’s the sides that can really turn a quick and ordinary meal into a culinary masterpiece.

Slow-Cooked Pot Roast


Betty Crocker helped me make the perfect pairing tonight with my famous Slow Cooked Pot-Roast which became a complete and delicious meal with a side of green beans and Betty Crocker’s own Mashed Roasted Garlic.

This is probably one of the easiest meals to make. It really simplifies things by allowing you to make it the night before in the Crock Pot, if you wish.

The other night, I just so happened to have everything I needed already. I put all the ingredients together in the crock pot and had a yummy meal ready for us later that day. Done and done.

Let’s break it down so you can make this perfectly simple pot roast yourself.

The trick to tender meat is to cook it on low for a longer period of time rather than on high for a faster amount of time. This is why it’s good to either make it the night before and let it cook on low while you’re catching some Z’s or you can start it in the morning before you start your day and it will be ready right at dinner time.

This recipe can really be adjusted to what you have in hand. That’s the good thing about slow cooker meals, you really can make due with what you have.

Chicken Saute with Thyme, Lemon and Chile

Love the simplicity of this dish: thin chicken cutlets are quickly sauteed, and then a quick pan sauce is created by cooking together fresh herbs, tart lemon juice and hot chiles. Serve with mashed potatoes and sauteed savoy cabbage.



2 Tbs. olive oil
3/4 lb. (375 g.) chicken breast cutlets
Coarse kosher salt and freshly ground pepper
1 large shallot, minced
2 tsp. fresh thyme, minced
1/2 to 1 serrano chile, minced
1/3 cup (3 fl. oz./80 ml.) dry white wine
2 Tbs. fresh lemon juice


In a large fry pan over medium-high heat, warm 1 tablespoon of the oil. Sprinkle with chicken with salt and pepper and add to the fry pan. Saute until cooked through, 2-3 minutes per side. Transfer the chicken to 2 warmed plates.

Add the remaining 1 tablespoon oil to the same fry pan, and then add the shallot, thyme and chile. Saute until the shallot begins to soften, about 1 minute. Add the wine and lemon juice, and boil, stirring up the browned bits on the pan bottom, until syrupy, about 1 minute. Remove the pan from the heat. Add any juices from the plate holding the chicken to the sauce and stir well. Taste and adjust the seasoning. Spoon the sauce over the chicken and serve right away. Serves 2.

Easy Vegetarian Shepherds Pie (Croissant Crust, Optional)


Another favorite that involves potatoes is this delicious Shepherd’s Pie, vegetarian style! Vegetarians can get their “comfort food” grub on too. I bet if you didn’t even say anything, nobody would even know this is made with vegetarian meat crumbles.
