If it was up to my 5 year old, she would eat mac n cheese for every meal so we have to really switch it up and keep her interest at the same time. For example, mac n cheese & peas (and sometimes ham), that’s a big one. She also loves broccoli when mixed with pasta. See where I’m going with this?
This is a family favorite and the baked chicken nuggets are great to send to school with a little side of dipping sauce. BBQ & Honey tastes great with them!
Baked Ranch Chicken Nuggets Recipe
Prep Time: 2 hours, 15 minutes
Cook Time: 20 minutes
Total Time: 2 hours, 35 minutes
4 skinless, boneless chicken thighs
1/2 cup prepared ranch dressing
Salt and pepper
1 cup seasoned bread crumbs
1/4 cup grated Parmesan cheese
Additional ranch dressing for dipping
Cut chicken into bite-sized nuggets. Place in a zip-top bag and pour on the ranch dressing. Squeeze out the air, seal, and gently squish chicken around so it is evenly covered with the ranch dressing marinade. Refrigerate for two hours or overnight.
Preheat oven to 400 F. Line a shallow baking pan with non-stick foil.
Combine bread crumbs and Parmesan cheese. Remove chicken from the ranch dressing and sprinkle with salt and pepper. Roll in bread crumb and cheese mixture until coated. Place on prepared baking pan.
Bake 15 to 20 minutes until golden. Serve ranch chicken nuggets with additional ranch dressing for dipping.
Yield: about 4 servings
