Cherry Pie Cookies


In an effort to make something different to bring with me on New Years Eve and given that pies are not my specialty, I decided to try out the Cherry Pie cookies. They turned out to be easy to make and extremely delicious.

Ingredients:
cup butter, softened
cup margarine, softened
2 cups flour
cup powdered sugar
1 tsp vanilla
21 ounce Cherry Pie Filling
cup white chocolate baking chips (If you prefer, you can use milk chocolate baking chips)

Preheat oven to 325 degrees. In a stand mixer or with a hand mixer beat together butter, and margarine until fluffy. Add flour powdered sugar, and vanilla just until combined and a soft dough is formed.

Roll the dough into tablespoon sized balls and place on an ungreased cookie sheet. about 2 inches apart. Make an indentation in the center of each ball (thumb sized). Scoop 1-2 cherries into each center indentation in the cookie.

Bake for 12 to 15 minutes. Allow cookies to cool. Melt the cup white chocolate on the stove or you can do what I did and use your microwave. Just be careful not to let the chocolate burn.

Once chocolate is melted you can add the drizzle with a spoon or scoop into a ziplock blog and cut the corner with scissors and drizzle the chocolate over each cookie.
