One thing I know for sure is that when I am stressed with a busy week there are two things I want from my dinner. Those two things are easy, and comfort food. At the end of the day I love to settle down around the table with some of our more fun and comforting family favorites. I don’t want to spend an hour or more around the stove whipping together a lavish meal filled with expensive ingredients that I can’t even pronounce. I’m talking about classic feel good and affordable fare for our whole family.
One of my most favorite “diner type” meals that is easy to whip up, packed with nutrients and both delicious and comforting would be the tuna melt. A family favorite, the tuna melt is a classic sandwich that can be plated with almost anything to make a complete meal.
Now almost everyone I know has their own recipe for a tuna melt. Some might find mine to be pretty similar to their own and others might find it really straying far from what their idea of a classic tuna melt is. However there are three things that I cannot stray away from when I make my two amount. One of those is pumpernickel bread. Although most tuna melts are made on the classic ride, and my daughter likes hers on the white, it takes a true tuna melt aficionado to enjoy the taste of tuna on pumpernickel.
Secondly the tuna melt must be made with miracle whip. In fact when it comes to tuna there is no other dressing I allowed to be paired with it unless it’s miracle whip. The taste speaks for itself with its sweetness and rich flavor.
Last but not least I must have Kraft cheddar cheese. Now what makes my tuna melts slightly different is that I prefer the cheese to be shredded and not in a slice. I feel that shredded cheese allows you to control the amount of cheese on your sandwich perfectly to help it married the flavor between itself and the tuna.
Plated with a side of almost any vegetable and a handful of healthy chips this is a quick and easy weekday meal that tastes just as good as it feels when you eat it. It might not be the most sophisticated of sandwiches or dinner entrées, but as far as comfort food goes this is really high on the list. It’s a family favorite, and a great way to get your omega three’s for heart health.
This meal has always reminded me of those fun weeknights where my family and I would skip dinner at home and show up to our favorite diner. Nowadays it seems like those diners are few and far between, but that doesn’t mean we can’t enjoy the same type of food at home for a quick, easy and affordable mealtime favorite.
1 can chunk light tuna
1 tablespoon miracle whip dressing
1 teaspoon prepared mustard
1 teaspoon finely chopped onion
1 teaspoon finely chopped celery
1 teaspoon finely chopped pickle
2 slices of your favorite bread (I choose pumpernickel)
1/4 cup shredded cheddar cheese
2 pads of butter (for frying the bread)
Combine all ingredient in a bowl except the bread, cheese and butter. Mix well.
Drop one pad of butter into your small frying pan allowing it to coat the pan evenly.
Place one piece of break into the pan and top with your tuna mixture.
Cover the tuna mixture with your cheese.
Place other piece of break on top of the cheese.
Allow one side of the bread to cook until nice and crispy, then carefully use a spatula to lift the sandwich while placing another pad of butter in the pan before flipping it.
Cook other side of sandwich until break is crisp, cheese is melted and tuna is warmed.
