Easy Organic Raspberry Lemonade Yogurt Pops


I’m not a fan of ice pops. You know, the pops that are mostly water and don’t have that creaminess to them? These on the other hand, well, all I can say is healthy, organic, creamy deliciousness.

This recipe has the makings of all of my favorite things. All Natural Simply Lemonade, Stonyfield French Vanilla Organic Yogurt, Blueberries and Raspberries.

Seriously, that’s it.

This recipe makes 12 pops and you can choose to use popsicle molds or even dixie cups and sticks will work just as well! Please try not to eat the yogurt before the popsicles are filled… you might have a tiny bit left to taste.

Raspberry Lemonade Yogurt Pops Recipe

Recipe by Modern Day Moms | Makes 12 Pops | Freeze Overnight

You will need:

Lemonade Layer

1/4 cup Simply Lemonade
1 1/3 cups yogurt (I used Organic Stonyfield French Vanilla)

Raspberry Layer

1 pint fresh raspberries
1 pint fresh blueberries
1/4 cup sugar
2 tablespoons water
2 teaspoons lemonade
1 cup yogurt

Note: For the raspberry layer, I decided to use 1 pint blueberries and 1 pint raspberries instead of sticking with strictly raspberries. I wanted to mix it up a little bit since I knew that once I had strained the raspberry seeds, I would be out some of the juice. You can also do 1 pint strawberry, 1 pint raspberry.

Directions:

1. In a small bowl, combine 1/4 cup lemonade and 1 1/3 cups of yogurt, whisking until smooth. Place lemonade mixture in the refrigerator.

2. For the raspberry layer, combine raspberries, blueberries, sugar and water in a medium saucepan and heat over medium heat bringing the mixture to a low simmer. Stir for about 3 minutes, until the blueberries and raspberries are soft. I used a potato masher at this point and mashed up the fruit, allowing it to produce more juice.

3. Before pouring the raspberry mixture into a bowl, you may want to run it through a strainer and remove some of those seeds. It’s really up to you. I simply poured the mixture through a strainer and let it run into the bowl. From there, you place the raspberry mixture in the fridge to cool down (do not add the yogurt yet).

4. Once the raspberry mixture is cooled, add the remaining 1 cup of yogurt and mix well.

5. Take your popsicle molds or dixie cups and begin layering the raspberry and lemonade mixture until the molds/cups are filled. To do this easily, I just used 1/4 measuring cup for each flavor and poured different patterns into the molds. Half and half ended up being the favorite (and easiest, see below).

6. Once they are filled, add the lids (or popsicle stick to cups) and freeze (overnight, if you can wait that long).
