Guinness Braised Corned Beef & Cabbage With Bonus Recipe


St. Patrick’s Day is coming up, which has me feeling all things Irish. It is nearly impossible to go out and drink bright green beers with small kiddos, so now we celebrate as a family with all the Irish eats. As an old Irish Proverb says, “laughter is brightest, where food is best,” and I couldn’t agree more. I’d much rather sit around the table eating a great meal with my family, opposed to a day out on the busy downtown streets. And this meal really is the best! I combined some Irish food favorites with Guinness to create a Guinness Braised Corned Beef With Cabbage recipe. Guinness has such a deep and rich flavor which pairs perfectly with corned beef!

Ingredients

1 tbsp olive oil

3 lbs corned beef flat cut brisket

2 12 oz bottles of Guinness draught

Pickling spice packet (generally comes in corned beef package)

1 medium onion, roughly chopped

1 tbsp garlic, minced

6 carrots, cut in 1 inch pieces

4 medium potatoes, large rough chop

1 tbsp olive oil

1 medium head of cabbage, chopped

tsp salt

tsp black pepper

Directions

Preheat oven to 250 degrees F. Rinse the corned beef under water (it is usually in a brine that I like to rinse off) and pat dry. In a dutch oven over medium heat, heat 1 tbsp of olive oil and sear the brisket on each side for about 5 minutes.

Add the Guinness bottles, pickling spice packet, onion and garlic.

Cover with the dutch oven lid and braise in the oven 2.5 hours. Flip the corned beef over and add in the carrots and potatoes. Braise an additional 1.5 hours.

When the corned beef only has 30 minutes left, heat the remaining tbsp of olive oil in a large pan over medium heat. Add in the chopped cabbage and cook until soft and slightly browned. Season with salt and pepper.

Once the corned beef is done, remove the brisket and slice the corned beef (against the grain). Use a slotted spoon to remove the braised carrots and potatoes.

The combination of the corned beef with the braised vegetables, saut ed cabbage, and Guinness flavor is amazing.

Bonus Leftover Recipe

Dice up some of the corned beef and add it to a pan with diced onion, some cabbage and shredded potatoes. Season with salt and pepper and top with a fried egg! You now have the most delicious corned beef hash!
