“Recipe from the Cantry: Ham & Black Eyed Peas”

Each month until December, Modern Day Moms will be featuring an easy-to-make healthy recipe using ingredients from my “Cantry“. What is a Cantry? Well, I’m sure we all have it. It’s the place you store all your canned goods. We actually have a ‘lazy susan’ cubby in our kitchen which we use as our Cantry. A well-stocked Cantry helps you save time and get a healthy, flavorful and home-cooked meal on the table, more often. It’s homemade made easy.

I haven’t had black eyed peas in a long time but I remember growing up, my mom used to make a delicious soup with them. I had a couple cans in my pantry so I decided to make this delicious soup. It’s very simple!

2 cans black-eyed peas
1 small boneless (pre-cooked) ham (usually found next to the bacon/deli meats), helps if already sliced.
1 medium yellow onion, chopped
2 cloves garlic, smashed
4 cups water
1 tsp garlic powder
1/2 tsp cayenne (optional)

Saute the onion and garlic in a large sauce pot with a little olive oil. Add the water and place the ham in the middle of the pot. Pour in the black eyed peas, spices and stir.

Cook on medium for an hour, stirring every so often.
