Harvest Cookies with Cranberries and Walnuts (Recipe)


If you’ve ever had the Harvest Cookies from Archer Farms (found in Target bakery), you will know exactly what recipe this is.

These cookies are amazing, simply put. There is something about the oats & the cranberries…not forgetting the walnuts, that just makes the perfect combination.

The closest recipe I have found that comes pretty darn close to those cookies would be the one from the Food Network website.

The trick is to not over-bake. These cookies should be chewy and soft.

The recipe is fairly simple. I hope you enjoy.

Oatmeal Cranberry Walnut Cookies

Ingredients

3/4 cup butter or butter shortening
3/4 cup sugar
3/4 cup firmly packed brown sugar
2 large eggs
2 teaspoons vanilla extract
1 cup all purpose flour
1 teaspoon baking soda
1 teaspoon ground cinnamon
1/4 teaspoon salt
2 3/4 cups old-fashioned rolled oats
1 cup dried cranberries
1 cup chopped walnuts

Directions

1. HEAT oven to 350 degrees F. Coat baking sheets with no-stick cooking spray.
2. BEAT butter/shortening, sugar and brown sugar in large bowl at medium speed of electric mixer until blended. Beat in eggs and vanilla. Combine flour, baking soda, cinnamon and salt in small bowl. Beat into shortening mixture until smooth. Stir in oats, dried cranberries and walnuts. Drop by rounded tablespoonfuls about 2-inches apart on prepared baking sheets.
3. BAKE 10 to 12 minutes or until light brown. Cool on baking sheets 2 minutes. Place on cooling rack to cool completely.

Yields 3 Dozen

    Made these tonight after a friend told me how yummy the Target ones are. Wow, these are good – we can’t stay away from them. Made mine with butter, which adds an incredible amount of flavor. Thanks for sharing the recipe.

    I must be doing something wrong as my cookies don’t look like yours at all. They are fairly flat. While they taste ok, they just aren’t pretty like yours. I’m not sure what I did wrong. I did use a combination of butter and shortening, so maybe that’s the problem? Or maybe I should chill my dough some? Anyway, thanks for the recipe…they are delicious cookies!
