When it comes to health and fitness related foods, I am no beginner. My husband and I have been exploring various ways of healthy eating for many years now. My husband has always had a unique approach when it comes to “health food.” Instead of trying to adapt his tastes to meals that he knows he wouldn’t enjoy, he takes the classics and makes them healthier. I think that this is a great approach, and has worked wonders for our family. Instead of demonizing certain foods, and making foods that you enjoy a “treat” only, you can eat what you enjoy everyday just by tweaking the recipe.
It’s no secret, and most doctors would agree, that the standard American diet isn’t working. Its over-reliance on heavily processed carbohydrates is making people overweight, unhappy, sick, and tired. I don’t believe that carbohydrates are the evil that some followers of a “no carb” diet would have you to believe. But one thing that we can all agree on is that over-processed, chemically laid in carbohydrates aren’t doing anyone any good.
As I step off my soapbox, this brings me to a more flexible approach to health food. Pancakes for example are one of my favorite foods. I remember waking up to smelling my own father making them on a Saturday morning, and the fond memories I have of that time. I remember my husband and I making pancakes together as a late dinner when we first started dating. I watch my husband now make pancakes for the girls in the house Saturday mornings and know that my daughter will also have the same great memories of this timeless and delicious breakfast.
How can pancakes be a health food you ask? Well, coconut flour pancakes are a fun and easy way to start and there is no sin in adding some bacon! Give these guiltless pancakes a try, and note how you feel after eating them. Many people have sensitivity to products and might not even know it. Either way, it’s coconut flour pancakes for all in this house!
Coconut Flour Bacon Pancakes
1/2cup coconut flour
4 slices of cooked bacon
1/4 tsp baking soda
Pinch of salt
1/2cup coconut milk
1/4cup organic, cold-pressed coconut oil
2-4 tbsp honey
1 tsp vanilla extract
Maple syrup to taste

Mix all the ingredients except the bacon together in a bowl. Make sure not to mix them too well, and leave a few lumps. This will prevent the pancakes from being too flat.
Preheat your frying pan on medium, and coat with PAM® Coconut Oil cooking spray.
Drop about 1/4 cup of mix into the pan and lay your bacon strips on top of the pancake.
Coconut pancakes don’t form bubbles like regular pancakes do, so check them frequently to make sure they don’t burn.
Cook evenly on both sides.
