Everyone seems to have a box of instant oatmeal packets hiding in their pantry or kitchen, sadly forgotten. While they make a quick breakfast, a lot of people get tired of the same old flavors of everyday oatmeal. Rather than throwing away money and letting oatmeal packets become trashcan bound, I try to re-purpose them.

Instant oatmeal packets aren’t just for breakfast, they also make wonderful, chewy oatmeal cookies unlike any other. This recipe is great because you can mix and match different combinations of oatmeal packet flavors together to create a different cookie every time. My favorites are the Maple & Brown Sugar mixed with Apples and Cinnamon, or Strawberries and Cream with Blueberries and Cream.

Instant Oatmeal Packet Cookies

Ingredients

1/2 cup butter, room temperature
1/4 cup white sugar
1/2 cup brown sugar
1 Tbs. milk
1 egg, room temperature
1/4 tsp baking powder
1/2 tsp baking soda
6 packets flavored instant oatmeal (can use all one flavor, or different combinations)
1 cup all-purpose flour
1/2 cup of raisins or nuts (optional)

Directions

1. Preheat oven to 350°. Beat softened butter with the white sugar and brown butter until smooth and creamy, then beat in the milk and egg until smooth. Meanwhile, stir the dry ingredients together in a separate bowl. Gently mix in the dry ingredients into the wet ingredients until evenly blended. Mix in the nuts or raisins (if using).

2. Drop by rounded tablespoonfuls about 2-inches apart on prepared baking sheets, flattening the tops of the cookie dough until they’re about 1/4 inch thick.

3. Bake for about 8-10 minutes, or until the cookies are light brown and crispy on the edges. Cool on baking sheets 2 minutes. Place on cooling rack to cool completely.

Makes about 15-18 cookies

    Just made these with a mixture of 2 low sugar apple cinnamon, 2 raisin and spice, and two steel cut oats maple and brown sugar flavoured. I put them in muffin liners and baked them in a muffin tin for super hearty breakfast on the go!

    hmm…so I did a combination of oatmeal packets lol (Fruit and cream variety pack)

    1strawberry
    1banana

    As you can see I used what was left.

    I also used vanilla soy milk instead of regular milk.

    The cookies came out not too shabby. I think the mixture of random flavors over did it a bit haha. I call it “fruited oatmeal cookies” :)

    I used the Raisins and Spice oatmeal and the cookies turned out great! I was able to make 20 cookies with the mix!

    (If anyone is curious, with 20 cookies, each cookie was about 145 calories)

    Made these with strawberries and cream oatmeal, and regular, and maple brown sugar. Added vanilla. So delicious couldn’t stop eating them! Any mix of oatmeal is good. I added nuts too.

    I made these with the cinnamon & spice added raisins and my husband loves them…he couldn’t tell the difference because I added a little bit of regular quaker oats texture, plus a little of my own tricks. I agree with the earlier comment about vanilla flavoring…just a capful does the trick. Thanks for this speedy recipe…LOVE IT!

    Just made these and they came out great. I used cinnamon roll instant oatmeal and only added the brown sugar. I then added mini chocolate chips, pecans, raisens and mini butterscotch chips. They were pretty loaded but we all loved them. Thank you for the recipe especially after I had (2) boxes of instant oatmeal sitting around after my 11 yr old said he didn’t like eating it anymore.

    Just whipped up a batch w/ all six packets of peaches & cream instant oatmeal. Cookies are too hot to eat, but the snippets of batter I munched on were delish! :p Great idea for those leftover packets (it’s ALWAYS the peaches & cream here, lol).

    Do you think I could use plain instant oatmeal packets? Should I add any extra flavoring, maybe maple syrup, brown sugar, cinnamon? The packets are awful so I was hoping to repurpose them to cookies! Glad someone else did the kitchen test first!

    I made a batch of these using tge cookies and cream kind. My boyfriend absolutely loves them (he’s very picky)! I’ve tried tons of oatmeal cookie recipes, but this one is by far the best! Thank you for sharing!

    SO good! I added some salt and cut out a little sugar and added chocolate chips and they were AMAZING! I also added some cinnamon pumpkin seeds!

    These were really delicious. I used 4 packets of honey nut oatmeal and 2 packets of cinnamon brown sugar. I didn’t have any milk on hand so I substituted 1 tbsp. liquid vanilla coffee creamer. These turned out beautifully. My family loved them. Great recipe. Thank you.

    Non-flavored works fine too! I used 6 packets of Trader Joe’s quinoa, amaranth, non flavored instant oatmeal that I couldn’t get anyone at home to touch. I couldn’t let them go to waste and was hoping someone had found a creative way to use the packets for cookies! Thank you! I added a dash of vanilla, raisins and pecans. So yummy!

    Made this with my 4 year old. We used cinnamon and spice instant oatmeal packets plus added mini chocolate chips. We ate the warm cookies that broke as we transferred them to the cooling rack. We couldn’t wait for the cookies to cool!!! This was so yummy.

    These cookies reminded me of sugar free cookie. Not much flavor and not very sweet (maple and brown sugar). If I make then again, I will definitely use more sugar and add vanilla.
