Mini Make-Ahead & Freeze Frittatas


The last thing you want to do in the morning as you are rushing around the house, is make a huge meal. But, let’s face it, breakfast is one of the most important meals of the day.

For a fun and easy morning meal, try these small-scale egg dishes. Baked in individual muffin cups, they ensure that everyone gets the mix-ins they like. Especially great for your picky eaters! The great thing about these is that they do freeze okay…. if you need to freeze them but they also store for a few days in the fridge if need be! Make ahead and problem solved.

Mini Make-Ahead & Freeze Frittatas

Ingredients

4 large eggs
1/4 cup half-and-half
1/2 teaspoon salt
Assorted mix-ins (such as shredded cheese, diced vegetables, and cooked and chopped bacon, ham, or sausage)
Grated Parmesan cheese (optional)

Instructions

1. Heat your oven to 350 F and coat a 6-cup muffin pan with nonstick cooking spray.

2. Whisk together the eggs, half-and-half, and salt in a medium bowl, then evenly distribute the egg mixture among the muffin cups.

3. Add about 2 tablespoons of mix-ins to each cup, then sprinkle on a bit of Parmesan cheese, if you like.

4. Bake the frittatas until they are puffy and the edges are golden brown, about 20 to 25 minutes. (If necessary, run a butter knife around the edge of each one to loosen them before removing them from the pan.) Makes 6 mini frittatas.

    I totally just made these with many leftovers in the fridge!!!-roasted beets, sweet potatoes, balsamic onions, roasted garlic and even some cold quinoa salad that was a bit sweet because of cranberries but tasted great! Added either garbanzo or asiago cheese and fresh greens-arugula/swiss chard from my garden!! Sprayed the muffins tins and they came out fine with the help of a knife!!! Going to freeze for the beach later in the week when my guest arrives!!! THANKS!!! YUMMO!!!!

    To freeze, I’m guessing you just cool completely, wrap each one tightly in plastic wrap, and put in the freezer? Do you just reheat in the microwave? For how long? And do they need to be thawed first? Thanks!

    has anybody made this with soy milk or 2%? Did they taste the same?

    I don’t like it with soy milk. I make them without milk. I just add a little bit of water or chicken/vege stock so the egg is not so thick. For the kids I add grated cheese and that seems to work ok without any milk too. I haven’t tried freezing them though. I came here to find out if they can be frozen :)
