Mini Broccoli Cheddar Chicken Pie Bites


When it came to making a quick & easy snack for the family, I knew I wanted to make something simple yet delicious. I got the idea to make mini hand pies and they were a huge hit. We are big fans of Immaculate Baking Co. and have been for quite a while now. We love that their mission is to create wholesome baking products – many of which are certified gluten-free or organic. Purchased our Immaculate Baking Co. products at our local Whole Foods Market. Of course, we used the Product Locator on Immaculate Baking’s website to find which locations near us carry the products we needed for our recipe. We picked up a box of Immaculate Baking Ready to Bake Pie Crusts.

The recipe is very simple. You unwrap the Ready to Bake Pie Crusts and lay them flat on the cutting board. Use a round cookie cutter or in my case, a lid to a mason jar.

Cut out as many circles as you can. You will need an even number of circles for your pies.

I didn’t photography making the pie filling because I was super into it but it was very easy to make. I’m not going to make it all technical: I steamed a bag of broccoli until soft, used already cooked chicken breast – shredded or cut into small pieces. Mix a can (or carton) of cream of mushroom (or chicken) soup, add salt pepper & garlic powder. Cut the pie crusts and place them in a muffin tin, add the filling, add cheese (optional), decorate the top with leftover pie crust. Bake at 350f until brown. Took about 30 minutes.
