Actually, my kids call this sweet potato cake… It tastes so amazing. So if you’re looking for a healthy casserole, THIS is not it. I could eat this every single night. And left overs are even better! And it compliments all meats. In fact, this is the sweet potato dish we eat on Thanksgiving… There is quite a few steps. And it takes an hour to be ready… But if you can ignore the amazing aroma, it is sooooo worth it. I hope you enjoy it as much as we do!

I have to admit, I was hesitant to share this recipe. Only because it doesn’t look very appealing. But, it was so tasty and so easy to make, that I thought it would be silly to hold back. I’m also going to go out on a limb here and say this recipe boarders on the healthy side too *gasp*.

Ingredients

3/4 pound hot Italian sausage
1 medium yellow onion, cut into 1/4-inch-thick half-moons
1 medium green bell pepper, seeds and ribs removed, cut into 1/2-inch-thick strips

I was trying to come up with a gift to give my husband. The very first thing that popped in my head was a painting!!!! This was a fabulous idea… there was only one issue. My child puts EVERYTHING in her mouth! I wasn’t about to let her paint with store bought paints. When I set out to make my daughter’s baby food I had no idea how much I would enjoy it. She’s completely off purees now and I still miss it!
