If you ever need a fun twist to taco night, here is a healthy idea for you. Sometimes, we decided to give our taco nights a little sprucing up.
Roasted Tomatillo Chile Salsa:
1 pound tomatillos, husked
1 white onion, peeled, sliced, quartered or whole
4 garlic cloves
2 teaspoons ground cumin
1 teaspoon salt
1/2 cup chopped cilantro leaves
1/2 lime, juiced
It’s summer and with a toddler and a preteen, it’s hard to manage everything all at once. I’m not saying who but sometimes one of my children like to sneak an electronic device up to their room and play on it until 4 am without us knowing.
