Land O’Lakes is doing something awesome and you can be a part. For every meal you pin from Land O’Lakes, they will donate 8 meals to Feeding America… but let’s back up a second so I can tell you more.
One in six people are living at risk of hunger in America, but there is hope and ways to help. Land O’Lakes has partnered with Feeding America® to kick off a Pin a Meal, Give a Meal campaign. Pin or re-pin any Land O’Lakes recipe and Land O’Lakes will donate 8 meals to Feeding America for every pin. Get easy meal ideas and help us fight hunger at the same time.
For every Land O’Lakes recipe that is pinned or re-pinned between March 4th and May 1st, the Land O’Lakes Foundation will donate $1 to Feeding America (up to $250,000 dollars or 2 million meals).
Participants will need a Pinterest account to pin or re-pin Land O’Lakes recipes. Creating a Pinterest account is free and easy. Visit: https://pinterest.com/join/signup/
One of my favorite Land O’Lakes recipes is their Popover Pizza! It’s a great recipe for kids too!
This twist on pizza pie is a golden popover hiding a flavorful filling of meat, sauce, vegetables and cheese.
1 pound lean ground beef or pork sausage*
1 cup chopped red bell pepper
1 large (1 cup) onion, chopped
1/2 cup sliced fresh mushrooms
1 (24-ounce) jar thick-style pasta sauce
1 (2 1/4-ounce) can sliced pitted ripe olives, drained
10 (3/4-ounce) slices Land O Lakes® Deli Provolone Cheese
2 Land O Lakes® All-Natural Eggs, room temperature
1 cup milk, room temperature
1 tablespoon Land O Lakes® Butter, melted
1 cup all-purpose flour
1/2 teaspoon salt
1/2 cup grated Parmesan cheese
Heat oven to 400°F. Combine ground beef, bell pepper and onion in 12-inch skillet. Cook over medium-high heat, stirring occasionally, 6-8 minutes or until onion is softened and beef is browned. Drain off fat. Stir in mushrooms, pasta sauce and olives.
Spoon mixture into ungreased 13×9-inch baking pan. Top with cheese slices. Place into oven while preparing topping.
Beat eggs in small bowl at medium speed, scraping bowl often, until light and lemon-colored. Add milk and melted butter; continue beating 1 minute. Stir in flour and salt, with wire whisk, until smooth. Pour mixture over hot filling, spreading to cover filling completely. Sprinkle with Parmesan cheese.
Bake 25-30 minutes or until top is puffed and golden brown. Do not open oven door during baking. Serve immediately.
*Substitute 8 ounces sliced pepperoni. Do not cook pepperoni; add with mushrooms.
