If there is one recipe that I could make weekly, it would probably be stir-fry. This recipe below is super easy and delicious. You can spice it up by adding red pepper flakes or keep it on the mild side if you’re sharing it with your pepper-hating, picky eater.
Make it even quicker by using boil-in-the-bag white or jasmine rice and you’ll have dinner on the table in no time.
Quick & Easy Chicken Stir-Fry
2 boneless chicken breasts
2 1/2 cups broccoli (frozen or fresh, ready to use)
1 bag ready-to-cook rice
Mazola Cooking Oil
1 tbsp Garlic Powder, Onion Powder
Salt & Pepper to taste
1 tsp soy sauce
1 tsp stir-fry sauce
Cut up chicken breast, trim off the fat, season with garlic & onion powder and stir fry with oil until no longer pink. Toss in broccoli and cook for a few minutes until tender. Add 1 tsp of water if necessary. Add in soy sauce and stir-fry sauce, and cook for a little longer. Salt & pepper to taste.
Serve with rice.
