Let’s be honest here, when it comes to dinner time, I don’t always feel up to cooking. It is days like that where I either wish I had a hot pizza waiting for me or I could make something that wouldn’t take much time at all. This is one of those meals.
The recipe is simple and it’s pretty versatile. You can switch it up however you’d like and I can imagine it will taste good either way. One thing my family loves is chili & cornbread and this is a delicious and easy way to combine both.
I actually used the Velveeta Cheesy Casserole Chili Cornbread dinner kit to spruce up this recipe. Velveeta has created a new line of Cheesy Casseroles in three varieties, Chicken Pot Pie, Shepherd’s Pie and Chili Cornbread.
I figured I could go the vegetarian route since my husband is not a meat eater. These kits are great and although they are wonderful, it’s fun to add your own little twist to them. For example, I added extra beans, shredded cheese along with what was included in the kit.
The results were yummy!
It was delish. Next time I might switch it up and make a meat version too.
