Spicy Shrimp Sushi Bowls with Cauliflower Rice


If you are a sushi lover (or even if you think you aren’t a sushi lover), you are going to absolutely love these homemade Spicy Shrimp Sushi Bowls. I have been making this for my family for a few years, and it is something my husband requests frequently. Think deconstructed sushi. That sounds so fancy. Maybe I should call this deconstructed sushi. Nah.

These sushi bowls are filled with rice (I use cauliflower rice), vegetables, shrimp, and spicy mayo. Because, spicy mayo on any sushi roll makes it somehow even more amazing. You will also get the flavors of ginger, soy and a mimic of wasabi, making this bowl complete sushi perfection!

Ingredients

Olive oil cooking spray
3 cups cauliflower rice (you can also sub white or brown rice)
1 tbsp soy sauce
1 tbsp horseradish
1 medium carrot, shredded
cucumber, diced
avocado, sliced
12 oz shrimp, raw
tsp salt
tsp garlic powder
tsp ground ginger
2 tbsp mayonnaise
1 tbsp hot sauce or sriracha

Directions (makes 2 sushi bowls)

In a pan over medium high heat lightly sprayed with olive oil cooking spray, add the cauliflower rice.

Stir frequently until cooked through, about 5 minutes. (If you are using regular or brown rice, add the desired cooked amount in the pan and continue with the next steps). Add in the soy sauce and horseradish, and stir until combined.

Remove the cauliflower rice from the pan and serve in the base of a bowl.

In the same pan over medium heat, sprayed with olive oil spray, add the shrimp, and season with salt, garlic powder and ground ginger.

While the shrimp are cooking, add shredded carrot, diced cucumber and sliced avocado over the cooked cauliflower rice.

Sear until shrimp are cooked though (depends on size, mine took about 4 minutes).

 Add the shrimp to the bowl.

Mix the mayonnaise and hot sauce.

 Pour the spicy mayo over the sushi bowls, and you literally have perfection in a bowl.
