“From The Cantry: Kid-Friendly Hearty Vegetable Soup”

Below, I will share with you a delicious recipe for soup that even the kids love. This soup is great with some fresh bread, sourdough or french.

Did you know? The red antioxidant, lycopene is found naturally in tomatoes. We get most of our lycopene from tomatoes and its absorption is two to three times greater in canned tomatoes than raw tomatoes.

Hearty Vegetable Soup

Serves: 4-6 | Cooking Skill: Beginner

Ingredients:

1 teaspoon olive oil
1/2 small onion, chopped
1 can canned tomato sauce (8oz)
1 canned diced/petite diced tomatoes (14.5 oz)
1/2 can canned tomato paste (6oz)
1 cup water
2-14 oz. canned vegetable broth
1 small can of corn
1 cup cooked green beans
1 cup chopped celery
1 cup cooked macaroni, wagon wheel, or small shell pasta (or any small pasta you choose, but my kid tends to love the wheels)
* 1 lb ground beef (cooked) can be added to the soup if you’d like

Directions:

Note: Before we begin, make sure you cook your pasta in a separate pot.

1. Heat olive oil in a skillet. Add onion and chopped celery to oil and cook until clear & soft. If you are adding ground beef to your recipe, this is where you will add the ground beef to the onion/celery mix, season with salt and pepper and cook until meat is brown and no longer pink.

2. While the beef is staying warm on the stove, get out your 5 quart soup pot, pour in vegetable broth broth, tomato sauce, tomato paste, diced tomatoes and water. Bring to a boil, turn down heat to medium and add the cooked ground beef mixture.

3. Once boiling, add the rest of your ingredients. This should be the corn & green beans. Stir. Add the pasta and mix soup together well.
