Today’s recipe involves quinoa & chicken!
Ingredients
3/4 cup cooked quinoa
4 skinless, boneless chicken breasts (6 oz. each)
1/4 cup Original Red Tabasco Sauce
1 tablespoon Pepper
Olive oil cooking spray
Directions
Preheat oven to 300 degrees . Spread the quinoa on a parchment-lined baking sheet in the center of the oven; bake until lightly toasted, about 25 minutes. Let cool, then transfer to a bowl, breaking up the clumps.
Increase the oven temperature to 425 degrees . In a separate bowl, combine the chicken, Tabasco sauce and pepper. Coat the chicken thoroughly. Place a rack on the reserved baking sheet. Dip the chicken in the quinoa, coating well on both sides, then place on the rack.
Spritz the chicken with cooking spray; bake until just cooked through, about 20 minutes.
