I would consider my daughter to be a picky eater. While it isn’t extreme, it’s bordering on a little bit annoying. At the sight of pepper on her food, she would avoid eating for the rest of the day and would choose to go to bed hungry or complain until something else magically appeared in front of her.
While we didn’t mind for a while, as she got older, we tried to explain that she really needed to eat what we eat. However, my husband is vegetarian and I am not so we do sometimes make different meals which meant, who were we to tell her she had to eat what we ate when we didn’t even eat the same things? But, after a while, we did try to explain that it is important to try and eat food, even if you aren’t sure that you’d like it. In the words of Yo Gabba Gabba, try it you’ll like it!
Imagine my surprise however, when she quickly fell in love with the Doritos Taco. Of course. Of course, she would like that! But.. we didn’t get it often.
….and then it clicked! I had an idea.
One of my favorite quick go-to meals is the Taco Salad. It’s fun and the variations are pretty broad. Avocado? Yes please. Italian dressing AND Ranch? You’ve got it! This recipe is pretty simple and depending on what you have on hand.
For this specific taco salad, I used the following:
– Shredded Cheese
– Salad Mix (Italian)
– Ranch & Italian Dressing
– Ground Beef
– 1 Sm Onion, chopped
– Doritos
First step:
Crumble up some Doritos in a big ziploc bag! All your frustrations of the day? BE GONE!
Next, brown the beef & chopped onion in a pan. Season if preferred. I seasoned with taco seasoning. Once meat is brown, let cool in the fridge. Hot meat on cold salad? Eh, not much of a fan. I let mine cool a few minutes.
Next, open up that dressing! Using both of these salad dressings is a must, at least for me.
Place the lettuce on a plate (or a bowl).
Add a spoonful of ground beef, top with shredded cheese, and dressings. Top it off with crushed Doritos.
Mmm. Enjoy!

12 years agoSave your dishes! Buy individual Doritos. Crush in bag. Add all the toppings. Voila…Taco Bag. We would sell these in the canteen at sports tournaments. Really popular. Also take them on days out on the lake in the boat, ski days, etc.
