Let the kids help make these Pecan Cookies. Combine House Foods Organic or Premium Tofu Soft with sugar, flour, baking powder and pecans to create a delicious batch of cookies. Next whip together powdered sugar, low-fat milk, and your favorite food coloring to make the frosting. INGREDIENTS:
4 oz (approximately 1/3 pkg) House Premium or House Organic Tofu – Soft, drained
2 cups flour
1 cup ground pecans
1 tsp baking powder
2/3 cup brown sugar
1/4 tsp salt
2 oz (1/2 stick) butter, unsalted, cut into 1/2 inch cubes
2 tsp vanilla extract
Flour and vegetable oil for dusting and greasing baking pan
Icing
10 Tbsp powdered sugar
2 Tbsp non-fat milk
Optional: 2~3 drops food coloring of your choice, sprinkles
DIRECTIONS:
Pre-heat oven to 325 F
Add flour, pecans baking powder, brown sugar and salt into food processor. Press button for a couple of seconds until the butter breaks into small pieces.
Add Tofu and vanilla extract into flour mixture. Mix until dough forms into a ball.
Lightly sprinkle flour on a large cutting board. Transfer the Tofu/flour mixture to cutting board and press by hand until the mixture forms into a ball.Using a rolling pin, roll out the mixture 1/4 inch in thickness and cut with cookie cutters. Brush off excess flour on cookies. Place all cut cookes on a lightly greased baking pan.
Bake cookies in oven for 20 minutes until the edges become lightly browned. Remove and transfer onto wire rack.
Icing: Mix powdered sugar and milk in a medium bowl. Add food coloring if desired. Spread icing over baked cookes and place on wire rack until icing dries. Decorate with sprinkles.
