This is one of my favorite soups to make and it’s really easy. I usually just throw everything together in a pot and let it simmer until done.
It’s so easy, I’m not going to make this super advanced and technical because it’s really hard to screw up.
Ingredients
Small Potatoes (red, yellow, whatever you prefer, rinsed)
Cooked Sausage Crumbles (we used about 1 cup of pork sausage crumbled and cooked)
1 bunch of Kale leaves (rinsed, rib removed)
3 cups Chicken Stock
1 cup of heavy cream
2 tbsp garlic powder
3 garlic cloves (peeled & smashed)
Salt & Pepper to season
Once you’ve rinsed the kale, potatoes and cooked your sausage up, throw the ingredients in a pan with the chicken stock, garlic cloves. Season to taste by adding in your own salt, pepper and garlic powder. I’ve found that 2 tbsp of garlic powder is the perfect amount. Let the soup simmer until the potatoes are tender. Add in the heavy cream and taste. You might need to add a little more salt/pepper. Let simmer for about 5 more minutes and your soup is done! Enjoy!

10 years ago@ambermunster We bought a “bunch of kale” for a recipe and I’ve been trying to use it up. It actually tasted amazing in the soup, full of cream, potato, sausage.
