I saw pictures of a casserole based on the traditional Meatball Submarine Sandwich. It seemed like a great idea that would be perfect to feed everyone and easy enough on a busy night. I also found that it made so much that it was used the next day in lunches.
Ingredients:
Bag of Frozen meatballs
Loaf of Fresh French Bread
1 jar of Marinara Sauce
Butter or margarine
2 cups of shredded Mozzarella cheese
1/2 cup of shredded Parmesan cheese
garlic salt
dash of pepper
Directions:
Preheat Oven to 400.
Place frozen meatballs and jar of marinara sauce and a dash of pepper in a saucepan and heat on stovetop for about 10 minutes. Set temperature at a medium heat. Make sure to stir while cooking so all meatballs are cooked evenly.
Spray your 9X13 pan with cooking spray. Once meatballs are cooked place the sauce and meatballs in the center of baking dish. Sprinkle the mozzarella cheese and Parmesan cheese on top.
Slice your french bread loaf into medium thick slices. You can either leave them plain or add butter and garlic salt to make homemade garlic toast. My family prefers garlic toast. Or you can but the garlic butter spread at store and make it easier on yourself. Then place the slices of bread around the edges of the dish to keep the meatballs and cheese in the middle.
Place the baking dish in the oven and cook for about 20 minutes. Keep an eye on the dish as you want the bread to be toasted but not burned on top. Oven times may vary a little.
