“Cheesy Morning Pizza Recipe”

Let’s be real. No matter how much you love cooking (because I really love cooking), there are days, as a parent, when you just don’t have the time in your busy life for pulling out meat, thinking ahead with a meal plan for the next day, and to devote hours in making a 5-course meal! Although, I enjoy my time in the kitchen, with three kiddos in Little League, trips to gymnastics, a busy teenager, and two younger monsters at home, the reality is that sometimes I need quick and easy with not a lot of prep time. While I’m not opposed to stopping for a pizza or fast food, I really prefer to stick to a minimal budget and do something homemade. This is why Safeway has many times become my life saver! This week, finding myself in the typical rush of a busy mom, had me pulling into my local Safeway on my way home to feed my hungry family. I love Safeway for many reasons: great produce and bakery, yes, but not only is it right next door to Target here in my town; it also has a great coffee shop and wine section. (What more could you ask for, right?)

I don’t know about your family, but in mine we definitely don’t all have the same food preferences. Except, for one thing…. CHEESE! Queso is a staple at our house. I always know that if there is cheese in our meal, everyone will pretty much love it. So, of course, as I’m walking through the entrance of Safeway, and the aroma of fresh fruit and the amazing deli hits me; I look up and the first aisle that I see says very clearly at the top of the list: cheese!

Not only was it literally, right there when I walked in, but the KRAFT section of shredded cheese jumped out at me as soon as I approached.

The packages were lined up in a new shelving system that kept them organized in a way where I could easily see exactly what I wanted. They are boldly labeled so you can quickly scan the names of the different types they offer. No more spending time shredding a block of cheese for me! I actually planned on just buying two packages of the Mexican cheese, but the price was just too good to pass up, so I ended up getting four different kinds!

The stand-up pouches are very convenient and keep the cheese from spilling all over the counter!

I was in and out of Safeway in no time, which was perfect for my crazy day. There was no searching the whole store for cheese, and the display and the new packaging made it easy to read the different kinds so I could just grab exactly what I wanted. There wasn’t a pile of cheese packages on the bottom of the display for me to dig through to find my favorites, and it didn’t hurt that the cheese section is conveniently right next to the wine section. (This also helps mom at the end of a busy day.)

I decided to create two recipes with this KRAFT cheese. I will highlight the second recipe in my next post. First recipe we are featuring today is called Cheesy Morning Pizza from KraftRecipes.com.



What you need:
1 lb. refrigerated pizza dough
1 Tbsp. olive oil
1-1/2 cups KRAFT Shredded Sharp Cheddar Cheese, divided
1/3 cup sliced green onions, divided (I used white onions as well)
1 plum tomato, sliced (I used tomato sauce as well)
6 slices cooked OSCAR MAYER Bacon, crumbled
4 eggs

HEAT oven to 375ºF.

PAT and stretch dough into 14×6-inch rustic rectangle on baking sheet sprayed with cooking spray; brush with oil.

TOP with 1 cup cheese and half the onions, leaving 4 (3-inch) areas of dough untopped. (Eggs will be added here.) Crack eggs, 1 at a time, into small bowl, then slip onto dough. Top dough with tomatoes, bacon, remaining cheese and onions, being careful to avoid topping the eggs.

BAKE 23 to 25 min. or until crust is golden brown and eggs are done.

Enjoy your favorite foods on occasion but remember to keep tabs on portions.
