Citrus & Rosemary Grilled Salmon
1 filet of wild caught *salmon
1 organic naval orange (juice and zest)
1 organic lemon (juice and zest)
1 tbsp local honey
1 tsp fresh lime juice
1/8 cup fresh organic rosemary (chopped)
salt and pepper to taste
In a small mixing bowl, combine the zest and juice of orange, lemon and lime juice. Add the honey, rosemary, salt and pepper. Wisk together. Pour the mixture over salmon and let marinate for at least 30 minutes, up to 2 hours at room tempature.
Once marinated, place the salmon on a hot grill or grill pan. Cook each side for 3-6 minutes (depending on size of filet, you might need to go longer or shorter time wise).
Serve over a bed of fresh greens (arugula shown), top with fresh herbs (cilantro shown) and a slice of citrus (naval orange shown)
