“From The Cantry: Easy Vegetarian Chili Pie”

Modern Day Moms will be featuring an easy-to-make recipe using ingredients from my “Cantry“. What is a Cantry? Well, I’m sure we all have it. It’s the place you store all your canned goods. We actually have a ‘lazy susan’ cubby in our kitchen which we use as our Cantry. A well-stocked Cantry helps you save time and get a healthy, flavorful and home-cooked meal on the table, more often. It’s homemade made easy.

Let’s be honest here, when it comes to dinner time, I don’t always feel up to cooking. It is days like where I either wish I had a hot pizza waiting for me or I could make something that wouldn’t take much time at all. This is one of those meals.

The recipe is simple and it’s pretty versatile. You can switch it up however you’d like and I can imagine it will taste good either way. This was an experiment and all in all, it was great. There are a few things I may try different next time and I talk about them below.

For this recipe, I made a quick pot of chili using canned pinto beans, canned black beans and canned spicy beans. From there, I used a box of chili mix, cut up some onions, added about 1/2 cup of canned enchilada sauce, enough water to cover the beans, garlic and let it simmer in a pot for a little bit just to get the flavors mingling.

This is the chili “box” that I use. It’s pretty straight forward. You can definitely make this yourself but since I had it on hand, I figured I’d use it to save time.

While the beans were simmering, I mixed up the cornbread. I use Martha White’s mix because it has no lard in it. I also added about 1/4 cup of canned corn into the cornbread mixture.

Once the beans had simmered, I poured them into a square dish, although I did have to transfer it to a larger one after I took this picture.

I sprinkled shredded cheddar on top of the chili before adding the cornbread mixture. Next time, I might put the cheese on top or mixed in with the cornbread.

It was delish. Like I said, this was an experiment and next time, I may change it up a little bit.

    This reminds me of what’s called Cowboy Dinner.

      Really? Never heard of it but I’m going to check it out. This was pretty good and cheap to make.

        It isn’t a vegetarian dish, but it is so yummy! It is beef, salsa (I use picante sauce) and corn mixed together. Then cornbread on top of it like this. I may have forgotten an ingredient, but not likely.
