Fall is here and with that means cooler temperatures just begging for some home cooked meals. Hustling and bustling to and from school and after-school activities make time together so very rare in this busy season. Though we are all extremely busy there is one thing we always seem to make time for in our home, and that is time around the table and they fresh home-cooked meal.
The mornings are such a rush, the days are filled with school and work, and sometimes homework lasts all the way until bedtime. It’s amazing that we get to speak to each other at all.
Ever since my first daughter was born, our family has made a commitment to eating around the dinner table together. This is a time we really cherish as we are able to take a break from our busy lives and come together enjoying each other’s company, and meals cooked with love. At this time we always ask each other about how the day has been going. We get to share a special time delighting in each other successes and failures throughout the day. It’s a great time where we really just listen to each other and strengthen our bond as a loving and caring family.
Though we don’t rush through the dinner, and we make sure to spend an appropriate amount of time with each other, it’s nice to not have to spend all your time slaving away in the kitchen when you could be spending that time with your loved ones. Our favorite comfort food, and my most favorite is our chicken and broccoli pie. This quick weeknight favorite is sure to please any hungry family. With a simple recipe that takes only a few moments to prepare has the flavor of something your grandmother would’ve slaved for hours over the stove for.
We take one piecrust and place it in a greased pie pan. 10 to 12 ounces of steamed broccoli mix together with two cans of 10 oz chicken breast and 12 ounces of condensed cream of mushroom soup. Once this mixture is thoroughly combined, add about a half a cup of shredded cheddar cheese and salt and pepper to taste. Spread this evenly in the pie crust and top with a second pie crust. Poke holes in the top pry cross to vent. Cook at 350 until top pie crust is golden brown, about 30 minutes. Serve with love, and delight in the special time around the table with your loving family.
