My husband never really followed sports too much. We didn’t have football parties, he didn’t drag me along to baseball games, nor was he screaming at the television when his home team didn’t sink a basket and basketball. It didn’t matter too much to me because I’m not much for sports myself. However when it comes to boxing he just can’t get enough of it. Recently we watched one of the most exciting fights of the year together and believe it or not even I got pretty excited. He and I rented the Marcos Maidana versus Adrien Broner fight and it was definitely an upset that turned the boxing world upside down.
Now, Marcos is fighting another undefeated champion, Floyd Mayweather Jr. Needless to say my husband has been pacing around the house like a caged lion all day. We order the fight almost a week in advance and have been eagerly awaiting for it to start. There have already been some tense moments with Mayweather contesting the choice of Maidana’s gloves, jeopardizing the entire fight. Fortunately that got soft pretty quick and the fight was on.
I wanted to let my husband know that I was with him for the entire fight. Although a lot of times I have to look away from the television and close my eyes when a good right hook connects, I get just as excited as he does when “our side “is winning. My husband seems to always root for the underdog and Marcos Maidana is certainly the underdog.
I started pretty early myself making some delicious finger foods for my husband and his friend that also will be coming over to watch the fight.
My husband is a little bit of a health nut so it is hard to get him to eat any greasy fried foods, but let’s be real, that is part of the fun. I opted for a good middle ground and went with turkey barbecue meatballs and barbecue drumsticks in addition to a few other tasty treats.
Needless to say these were an absolute hit and I thought they were pretty good too. There is something about gearing up for a sports match, and chowing down on some finger foods with your friends. Please enjoy these recipes that my husband asked me to make again.
Thanks to KC masterpiece barbecue sauce I turn some pretty average hors d’oeuvres into some extraordinary foods for the fight.
BBQ Turkey Meatballs
1 pound ground turkey
1 cup cracker crumbs
1/4 cup chopped onion
1/4 cup milk
3/4 teaspoon salt
1 cup KC Masterpiece Kansas City classic bbq sauce (KCMasterpiece.com)
Preheat an oven to 350 degrees F (175 degrees C).
Mix ground beef, cracker crumbs, chopped onion, milk, eggs, and salt in a large bowl. Roll out 20 meatballs and arrange on a baking sheet with a rim. Pour bbq sauce over meatballs.
Bake in the preheated oven until the meatballs are no longer pink in the center, about 45 minutes.
BBQ Baked Chicken
(drumsticks and wings)
Approx 12 Chicken drumsticks, thawed
Approx 12 Chicken wings, thawed
1.5 cup KC Masterpiece Kansas City classic bbq sauce (KCMasterpiece.com)
2 tsp dried parsley
2tsp garlic powder
Salt and pepper:
Preheat oven to 400F.
Lightly grease a baking sheet.
Sprinkle chicken drumsticks and wings with salt and pepper, parsley, garlic powder and paprika (optional).
Slather about half the sauce all over the chicken drumsticks and wings. Put in the oven and bake for 45 minutes or until done
Warm the rest of the BBQ sauce in a cup in the microwave, and pour over cooked drumsticks. Enjoy the baked BBQ drumsticks while they are hot!
