As we move further into the fall season, a slow cooker can be the saving grace for busy families. It gets dark earlier in the evenings, schedules fill up, and the last thing you want to do when you get home from a crazy day is spend a ton of time prepping dinner.
Below recipe is from Jane DeLaney, mother of four and founder of budgeting/meal-planning service, eMeals.com. All her recipes can be made for less than $3 a serving and have enough variety to appeal to even the pickiest eaters.
You Will Need:
5 lb Boston butt
18 oz bottle BBQ sauce
12 oz cola drink
c mayonnaise
2 t vinegar
2 T sugar
1 bag slaw
Hamburger buns
Directions:
Place pork in crockpot and pour BBQ sauce and cola over pork.
Cover and cook on high 8 hours (or low 12 -16 hours), until pork is tender and meat shreds easily.
For slaw, combine mayonnaise, vinegar and sugar in a large bowl. Mix well, and toss with slaw. Serve pork and slaw on hamburger buns.
