As part of my partnership with Bisquick, I wanted to try a seasonal recipe with the versatile baking mix Bisquick™. My husband quickly stepped in and asked if he could make the recipe! He had something in mind and wanted to show me.
Once he brought me this plate of delicious pancakes, I wanted to cry tears of happiness. As someone who has been trying to eat low-carb for the past few weeks, this was music to my ears and I was in heaven. I couldn’t say anything except show my appreciation by scarfing them down. These pancakes are so freaking good.
2 containers pumpkin spice flavored yogurt (seasonal)
1/2 cup milk
1 teaspoon vanilla
2 1/4 cups Original Bisquick™ mix
Butter and maple syrup for serving
In a bowl, mix the yogurt, milk, vanilla and eggs until combined well. Pour in the Bisquick, stirring as your pour a little at a time. Mix it well to combine and make sure all lumps are out of the batter.
Heat frying pan over medium-high heat and place a pad of butter in the pan (butter makes the edges crisp and delicious).
Use a 1/4 cup scoop to put the batter onto the frying pan; cook until bubbles start to form on surface of pancakes and the edges become crisp.
Flip the pancake, and cook on other side until golden brown.
Repeat until all mix is gone.
Serve warm with butter and maple syrup.
