Each month until December, I will be featuring an easy-to-make healthy recipe using ingredients from my “Cantry“. What is a Cantry? Well, I’m sure we all have it. It’s the place you store all your canned goods. We actually have a ‘lazy susan’ cubby in our kitchen which we use as our Cantry. A well-stocked Cantry helps you save time and get a healthy, flavorful and home-cooked meal on the table, more often. It’s homemade made easy.
Today’s recipe is a simple one that is also delicious. It just so happens to be one of my 6 year old’s favs.
Tortellini Carbonara
8 slices cooked bacon, crumbled
1 cup whipping cream
1 can of peas (sweet peas work great)
1/2 cup minced fresh parsley
1/2 cup grated parmesan cheese or 1/2 cup romano cheese
1 (8 ounce) package refrigerated cheese tortellini
Directions:
1 In a large saucepan, combine the bacon, cream, parsley, peas and cheese; cook until heated through.
2 Meanwhile, prepare the tortellini according to package directions; drain and transfer to a serving bowl.
3 Drizzle cheese sauce over tortellini and toss to coat.
4 Serve immediately.
