Here’s the thing about Beef & Broccoli, when you buy it frozen at the store it is just not the same. Those little bags boasting restaurant flavor, being easy as 1-2-3. Eh, not really a fan.
I’ve gotta admit, I was a little skeptical going into this recipe. I wasn’t expecting anything and I surely didn’t think I’d be “wowed” by how delicious it tastes. The only thing that could have made this better would have been serving it with a side of fried rice. I haven’t found a recipe that I liked for that yet, so if you have one, please share!
Let’s get to the recipe, yes?
Ingredients:
1 pound round steak, sliced into thin like strips.
1 clove garlic, minced
1/2 cup of onion, sliced or chopped
1 can beef broth
2 tbsp cornstarch
1 tbsp brown sugar
2 tbsp soy sauce
1/2 tsp garlic powder
1/4 tsp ground ginger
4 cups broccoli floretsDirections:
1. Coat wok or skillet with cooking spray, heat over medium heat for a minute or so.
2. Add beef, onion and minced garlic. Stir fry until brown. Remove beef and put on plate. Keep warm in microwave.
3. Add half of the beef broth and all of the broccoli to the wok. Cover and simmer until broccoli is tender and crisp.
4. Mix cornstarch, brown sugar, garlic powder, ground ginger and soy sauce with remaining broth. Mix until smooth. Add to the broccoli that is in the pan. Cook until mixture begins to thicken, stirring constantly. Return beef to mixture, stir until warm and serve.
Cooking Note: There is really no wrong way to prepare this meal. If you already have crisp broccoli ready to go, like I did, you can sort of merge the steps together and add the broccoli to the meat when it’s done cooking and then prepare step 4.
Serving Note: You can serve with cooked rice or fried rice. You can also serve broccoli beef over rice.
