Just because I am having a vegetarian meal, doesn’t mean that I can’t indulge in a guilty pleasure! Then again, it doesn’t mean that I have to feel guilty about that “guilty pleasure” either.

I love the taste of black bean burgers. I love eating them with rice & avocado. To me, that is the perfect meal.

I pan fry the black bean burger and make my favorite rice as a side dish. Simplest meal, EVER. Perfect for lunch on the go as well.

Aside from eating the veggie burger plain, I am a huge fan of a good old quesadilla. To me, it’s one of those foods that has everything I want. It’s hot, tasty, savory and fills me right up. It’s a good food for parties, for dinner, for lunch, or to share with your husband for late night snack. Now for years, I used to just make a plain cheese quesadilla, and dip it into a little salsa. That is until my husband decided to cut up one of his Morningstar Farms® Spicy Black Bean Veggie Burgers and put it in the mix. It was absolutely to die for. Now whenever I say they word “quesadilla”, my hubby asks, “Do we have any of those Morningstar Farms® Spicy Black Bean Veggie Burgers?”.

If I told him no, I don’t think he would want a quesadilla at all. What makes the black bean burgers so great are that they are made with black beans, brown rice, corn and chili peppers. The chili peppers give it just enough kick to perfect the quesadilla. Containing 72% less fat than regular ground beef, your indulgence doesn’t have to make you feel so guilty anymore. If anything, this quesadilla has just now become “good for you.”

Spicy Black Bean Veggie Burger Quesadilla

2 Morningstar Farms® Spicy Black Bean Veggie Burgers
1/2 cup salsa
1/2 cup shredded Cheddar cheese or Monterey Jack cheese (2 ounces)
1/4 cup shredded Pepper Jack cheese (1 ounce)
2 teaspoons salt-free Southwest or Mexican seasoning
10 (8-inch) flour tortillas
1 tablespoon butter or margarine, melted
2 1/2 cups shredded lettuce (optional)
2 tablespoons finely chopped red or green bell pepper

1. In medium bowl toss together MORNINGSTAR FARMS SPICY BLACK BEAN VEGGIE BURGERS, salsa, Cheddar cheese, Pepper Jack cheese and seasoning.

2. Use pizza cutter to cut tortillas into 7-inch triangles. (Save trimmed edges for another use.)

3. Place about 2 tablespoons burger mixture in center of each triangle. Fold corners of large triangles over filling, completely enclosing filling and making small triangles. Secure with toothpicks. Place on baking sheet, toothpick side up. Brush with butter. Bake at 375°F for 9 to 12 minutes or until beginning to brown on top.

4. Arrange on top of shredded lettuce. Sprinkle with bell pepper. Serve immediately.

*Note: To thaw, place in microwave and heat for 30 seconds.
