The combination of RO*TEL and VELVEETA make a queso dip that is so good it will be the star of your next tailgating party!

We like to do things last minute in our house. We can’t stand to plan for weeks for a party and normally don’t know what we are going to do the next day until the night before. So when we plan something exciting like a party to watch the big game, we don’t give ourselves a lot of leeway let alone our guests.

Fortunately our friends are similar in that regard and are usually looking for something to do as well. Last-minute entertaining equals last-minute cooking. One of my favorite things to make as an appetizer is not only easy but it is zesty, creamy, and most of all yummy! It’s Queso made with RO*TEL and VELVEETA, and it’s a real crowd pleaser.

Not only do our parties usually stand out but so does our Queso. Though it is quick, easy and zesty with only two ingredients, VELVEETA and RO*TEL, I like to add a little pizzazz on top of mine with some fajita vegetables and sirloin steak. This recipe is the perfect addition to any occasions entertainment spread.

Steak Fajita Queso Dip

4 ounces Sirloin steak, cut into strips

2 Jalapeños, sliced

1 bell Pepper, sliced

Cilantro, diced

Garlic, minced

Onion, sliced

Spiced to taste with paprika, cumin, salt and pepper.







Cook these ingredients in a pan until steak is at desired done-ness.

Melt 8 ounces Velveeta cheese in microwave (about 2 minutes) and add 5 ounces (half a can) Ro-tel diced tomatoes and green chilies. Mix in your steak and vegetables and top with the rest for a hearty queso!
