It’s not very often that you will find me ordering a grilled cheese at a restaurant but I will be the first to admit that it’s one of my favorite go-to snacks at home.
However, last year, as I was sitting in the hotel room after a long day, I looked at the room service menu and the GRILLED CHEESE just stood out to me. It was unlike any grilled cheese I’ve had before.
You see, when I make a grilled cheese, it never gets evenly crisp like this sandwich did. Mine were never fluffy in the middle like this one. What did they do that I haven’t done before? I thought about it for a minute and then I forgot.
Until recently.
My husband is a great cook. I will always remember the times when we first met, after we’d be up for hours taking, playing cards, listening to music.. I would wake up to a delicious snack or meal of some sort. My favorite was the Thai Peanut Tofu w/ noodles and veggies.
The other day however, I wanted something simple and saw him in the kitchen. I hinted at a grilled cheese and what he made me put the hotel’s sandwich to shame.
I had to learn his trick… and then I asked if it was okay to share. Let’s hope you are ready for this.
The trick to the best grilled cheese sandwich ever is…..
Real butter. We use unsalted sweet cream.
Not only that, DON’T SPREAD IT ON.
and another thing…. KRAFT SINGLES.
Cut thin slices and place it on top of bread like so:
Also, don’t add anything to the pan. No oil, no butter. A little Pam spray if you HAVE to.
Add the cheese, we use American. Add the other slice of bread…and “grill” for a few minutes, watching carefully.
The results of this are beyond amazing. Crisp, brown edges.. evenly toasted.
It’s silly that I’m calling a grilled cheese amazing, but really, it is.

13 years agoWait, so I’m confused. Do you put the butter slabs INSIDE the grilled cheese (between the bread and the cheese)? And between the cheese and both slices of bread? (So like bread, butter, cheese, butter, bread)?

13 years ago AUTHORThe butter goes on the outside, the part you grill. Instead of slathering it on – you put the slices so that it remains crispy and not mushy.

12 years agoMy dad always used a cast iron skillet, when I was growing up. But I hav found that a flat griddle skillet works really good. Always hav used real butter, to make it real crispy. Try different breads, I like the the multi whole grain bread.
