“Breakfast-For-Dinner Protein Bowl with Kale, Sweet Potato, Sausage & Egg”

Sometimes you just have to have breakfast for dinner. This delicious protein bowl is the perfect mix of tasty and hearty. By using Alexia Sweet Potato Fries to give it a sweet kick, you really can’t go wrong with this quick & easy meal.

The carefully balanced sweet and savory flavor of sweet potatoes together with the tender sautéed kale and hearty sausage & egg make this this perfect weeknight meal option.

Let’s get to it. It’s super easy.

Ingredients

1 tbsp coconut oil
1/2 small onion, diced
3 cloves garlic, minced
1 cup shredded kale
1/2 cup Alexia Sweet Potato Fries, cut into small pieces
2-3 pre-cooked sausage links, cut into pieces
1 Egg
Salt and pepper to taste

Add a tablespoon of coconut oil to a medium sized frying pan over medium heat.

Fry together the frozen sweet potato fries and the sausage. When sausage is cooked, add in the onion, garlic and kale, continuing to sauté. Add salt and pepper to taste.

When browning starts to occur on, create a small space for your egg and crack into the pan. Allow the egg to cook to your taste. Once the egg is cooked, use a spatula to transfer the entire mixture into a bowl or onto a plate.
