“Roasted Beet and Strawberry Salsa”

Ingredients

1 large beet (tops off,  roasted*, skin off, chopped)
4 large strawberries (stems off, sliced and diced)
1/2 seedless cucumber (skin on, chopped)
1/2 red bell pepper (seeded, chopped)
1/2 cup radicchio (chopped)
1 tbsp Extra Virgin Olive Oil
1/2 tbsp Balsamic Vinegar
Salt/pepper to taste

Directions

Place all ingredients into a large mixing bowl and toss until all flavors are blended.

Great dish to serve for parties with chips or other veggies!

*Roasted Beets: heat oven to 350.  cover beats with aluminum foil and roast for about 1 hour or until beat is tender dependning on size.

I always use organic ingredients whenever possible.
