Why eat gluten-free?
Many people must follow a gluten-free diet for health reasons. Celiac disease and gluten intolerance necessitate a diet free of gluten-containing grains like wheat, barley and rye. Some avoid gluten as a means to lose weight while others go gluten-free to try to improve behavioral issues associated with conditions like autism. What is celiac disease?
Our intestinal tract is lined with finger-like projections called cilia that extract essential components from food like nutrients, vitamins, and minerals as it passes through our system. In individuals suffering from celiac disease or gluten intolerance, the body essentially launches an attack on itself and the cilia become broken down to the point where they are no longer able to perform their vital function. This can cause numerous debilitating symptoms such as fatigue, weight loss or weight gain, headaches, or depression. A gluten-free diet is imperative to combat these symptoms and for these individuals to regain control of their bodies and livelihoods.
